CORE DUTIES

The core duties of the Distiller are fermentation, distilling the wash to company specifications, bottling, and shipping spirits, and keeping production records. The Distiller must achieve desired quality and production goals.

Other duties are as follows:

• Make wash, transfer to fermenters, determine quality (heads, hearts & tails), operate filtration system

• Closely monitor active processes

• Packaging tasks as required

• Maintain all production equipment and floor area

• Troubleshoot and resolve mechanical problems

• Maintain appropriate SOPs for all processes

• Maintain a clean working area by cleaning as needed

• Work with service and bar staff with product knowledge to ensure product success

POSITION SPECIFICS

• Ensure that the distillery’s products maintain quality standards. They will work in conjunction with the full Production team to ensure the distillery’s products remain high quality.

• Ensure health and safety compliance. Work to ensure the necessary workplace environmental, health and safety policies are strictly adhered to.

• Standard Operating Procedures: Develops and maintains Standard Operating Procedures (SOPs) for all aspects of production: brewing, barreling, bottling, packaging, maintenance and QA/QC.

• Problem Solving: Assist in troubleshooting/problem-solving production issues and for keeping management informed of progress.

EDUCATION AND EXPERIENCE

• A formal distilling education or craft beverage production experience preferred

• High School diploma or higher is preferred

• 1 year experience in BJWC distilling preferred.

MINIMUM REQUIREMENTS

• A passion for boutique spirits and a refined palate for them

• Good communicator, articulate and friendly

• Ability to work on one’s own and unsupervised

• Self-starter with a high level of initiative

• Safety conscious at all times

• Meticulous attention to quality and process

• High level of personal hygiene, exceptionally well presented

• Good written and verbal skills

Essential Physical Functions

• Communicates effectively to team and leadership

• Enters and locates information on computer and equipment

• Creates documents, reports, and various data for tracking progress and success

• Ability to lift weight in excess of 40 lbs.

• Ability to carry weight in excess of 40 lbs.

• Ability to sit/stand for prolonged periods of time

• Ability to pick up and transport production supplies and certain equipment
